We produce a single wine, Primu, which is our family's first bottled wine. We cultivate 1.7 hectares of land, divided into three plots. Two vineyards, for a total of 1.4 hectares, are located in the heart of ancient Sulcis, precisely in the locality of Sa Barra, near Tophet, on sandy and mixed clay soils, a few steps from the sea. The vines are exposed to the mistral wind and oriented in a north-south direction. We cultivate the vines according to the traditional bush method, without espaliers, a system that requires manual work, now rare, such as cleaning the under-row, tying the shoots and harvesting after pruning.
Viticulture in this area is a centuries-old tradition. The yield per hectare is low, with an average of around 45 quintals for the 2021 vintage. We only select the best grapes from the most productive rows; the rest of the harvest is delivered to the Cantina Sociale di Sant'Antioco.
In the cellar, after about 10 days of fermentation, the wine rests for 9 months in stainless steel tanks, without the addition of tannins, but with a slight clarification and filtration. The aim is to preserve the aromas and scents typical of our grapes and our terroir. After ageing in stainless steel, the wine rests in the bottle for a further year.
In the 2021 vintage, only 3000 bottles were produced, of which 1000 are available. For the 2022 vintage, on the other hand, 1800 bottles are available.
Wine characteristics: The wine has an intense ruby colour and offers hints of berries and spicy notes. It is a structured and full-bodied wine with aromas of Mediterranean scrub, cooked plums and dried fruit. It pairs perfectly with meat dishes such as lamb, suckling pig on the spit and mature cheeses. It is also ideal with tuna and fish dishes for those who like a red wine.
